Yesterday night I was unable to get the audio to steam from my Quest 3 to my Windows computer (wired connection) with ScrCpy on SideQuest until I found this issue on GitHub https://github.com/Genymobile/scrcpy/issues/4354 which also worked for me (plugging in aux earbuds, that is). I then had the Quest audio in the headset and through the pc. I wake up today and now have this same problem, where having the earbuds plugged in sends the audio to the pc, and having them unplugged keeps the audio on the headset. Whichever way I have it, I cannot replicate yesterday's scenario where it was playing on both devices. The github link with the audio tags https://github.com/Genymobile/scrcpy/blob/master/doc/audio.md allows to deactivate audio (--no-audio) which keeps it on the headset, but I need it on both devices and I know it's possible I just don't know what the variable is. --require-audio does nothing from my experiments.
